Eddie Poon: Honouring Tradition, Embracing Change

Eddie Poon, a dedicated employee who coincidentally shared the same surname as the restaurant’s founder, learned the craft of traditional Cantonese cooking and eventually took over the business. He adapted the menu to suit Australian tastes while preserving authentic Cantonese flavours. Under his leadership, the restaurant became a local institution, known for its handmade dim sims and special fried rice—dishes that remain unchanged to this

day.

A Legacy Carried Forward, A New Home in Sunshine

After Eddie’s passing in the 1970s, his wife Shirley So, supported by her brother Hon So, carried on the business. Later, Eddie and Shiley’s son, Gary Poon, continued the family legacy until his retirement in the 2000s. Today, the restaurant is run by Hon’s daughter, Kit So, and her husband, Billy Mok. In 2024, after over 70 years at its original Footscray location, the restaurant moved to a larger, more modern space in Sunshine and rebranded as Diamond Palace, ensuring that the legacy continues for future generations.
